Most likely is that its water retention over the weekend that you drop right back off again. Youre right, you probably dont put on & take off fat that quickly.

I drink about 2 gallons of water a day but twice a week I drink less by design. The next day, I always weigh more but it comes right back off when my water drinking goes back up.

Are you trying to lose weight? Or just trying not to gain fat?

I would begin with a 3-4 day per week workout program as outlined here:

http://www.bodybuildingpro.com/trainingsplits.html

I would recommend hitting each muscle group one time per week. Larger muscle groups such as back, legs, and chest do not need more training than that, but smaller muscle groups such as biceps, triceps, and calves could probably be trained twice per week if you really wanted to. This would be an adequate training plan, and use your judgment to guide you through any changes to the program as time goes by.
